Banana Bread

This delightful banana bread recipe is perfect for any occasion. Let’s get baking!

YOU WILL NEED:

  • 250g (2cups) all-purpose flour
  • 150g (3/4 cups) granulated (brown) sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 120 g (1/2 cup / 1 stick) unsalted butter, melted
  • 2 large eggs
  • 4 ripe bananas, mashed (about 500g)
  • 80 g (1/4 cup) yogurt
  • 1 tsp vanilla extract
  • Optional: 100g (1/2 cup) chopped nuts and chocolate chips

DIRECTIONS:

  • Preheat Oven:  Set your oven to 175°C (350°F). Grease a 9×5 inch (23×13 cm) loaf pan or line it with parchment paper.
  • Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking soda, and salt. Stir until well blended.
  • Prepare the wet ingredients: In a separate bowl, whisk together the melted butter, eggs, mashed bananas, milk, and vanilla extract until smooth.
  • Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix. If desired, fold in the nuts or chocolate chips at this stage.
  • Bake the bread: Pour the batter into the prepared loaf pan. Smooth the top with a spatula. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
